Omelette and Palak Curry
Ingredients
- 6 Eggs
- 900g Spinach (Palak)
- 2 small chopped Onions
- 1 teaspoon chopped Ginger
- 1 teaspoon chopped Garlic
- 1 chopped Green Chilli
- 2 Cloves
- 4 large chopped Tomatoes
- 1 tablespoon grated Coconut
- 50g Ghee or Oil
- Salt to taste
Method
- Make 2 omelettes with six eggs and a little salt, fry in a little fat.
- Cut the omelettes into small cubes.
- Cut the spinach very fine.
- Fry onions, ginger and garlic in fat until light brown.
- Add chopped tomatoes and other ingredients except coconut and fry for approx. 20 minutes.
- Add omelette cubes and cook for a further 5 minutes.
- Garnish the dish with the grated coconut.
- Serve it hot with chappaties or fried rice.
