Omelette and Palak Curry

Method

  1. Make 2 omelettes with six eggs and a little salt, fry in a little fat.
  2. Cut the omelettes into small cubes.
  3. Cut the spinach very fine.
  4. Fry onions, ginger and garlic in fat until light brown.
  5. Add chopped tomatoes and other ingredients except coconut and fry for approx. 20 minutes.
  6. Add omelette cubes and cook for a further 5 minutes.
  7. Garnish the dish with the grated coconut.
  8. Serve it hot with chappaties or fried rice.
